Admiror Gallery is free extension for Joomla! 1.6. Joomla! 1.7 and Joomla! 2.5 based websites. Admiror Gallery is all in one, a simple and instant solution for rendering image gallery from folder with images, but very flexible and adaptable.
I'm using Joomla! 2.5.8 and Admiror Gallery 4.5.0. When am I try to change basic settings such as: colors, templates or popup engines noting change.

What am I doing wrong?
It explains the 3 different settings that are applied in 3 different situation.
My best guess would be that you added a Gallery Layout as a menu item. When you do that that particular menu item has it's own settings, so cannot change them from Admiror Gallery Control Panel, but instead in Menu Item edit.
