I have tried changing settings in both the component and the plugin to no avail. I have tried setting it to where I have 20 images on one page and no pagination, but it still only shows 10 and then the second page. The settings are showing changed, but nothing is actually changed. This is also happening with the gallery width (which I tried changing hoping it would center the gallery) and it still showed no changes?????

If you added a Menu item of Gallery Layout type, you should go to Menu manager and open its settings. Every menu item has it's own settings :)
